These low carb holiday recipes should help you keep from losing the momentum you might have gained in your lifestyle change while still being able to enjoy a festive family meal. As the only person in my family actually eating low carb, I need these low carb holiday recipes so that when we sit down to eat, I too have food on my plate.

These low carb holiday recipes kind of figure that you will be roasting a turkey which is in itself a low carb dish. However, you could do roast beef or steak or even chicken depending on your preference and family size.

Low Carb Turkey Stuffing

Depending on the size of your turkey or if you are actually stuffing with only low carb turkey stuffing, you will need to make more than one loaf of low carb bread. My plan is to make low carb turkey stuffing on the side for me, but regular stuffing for the family.

What you need

  • 1/2 of the loaf of low carb bread toasted and cubed.
  • 4 tbs butter
  • 1/4 cup finely chopped celery
  • 1 tbs finely chopped onion
  • sage
  • chicken broth

Slice and toast and cube 1/2 of the low carb bread recipe (from below). Saute celery and onion in 4 tbs butter. (I like my stuffing pretty buttery) Add the bread and saute that all together. Next add a bit of sage (when it smell amazing to you that is good). Sprinkle on a pinch of salt and pepper and mix well. Finally add enough chicken broth to make it stick together a bit. I’m thinking about 1/2 cup or less will do the trick.

Put the stuffing in a buttered baking dish and cover. Bake for about 45 minutes with the turnkey at the end (I bake my turkey at 325) If you are going to crank the oven up and bake stuff at the end then probably only take about 25 to 30 minutes to get it all yummy.

Low Carb Mashed Cauliflower Recipe

What you need:

  • 1 head cauliflower
  • Milk
  • Sour Cream
  • Butter
  • Salt n pepper

Rice your cauliflower and then boil it for 10 minutes in chicken stock. Drain it well. Add a bit of milk, sour cream and butter then mash or blend with your hand mixer/beater until creamy. Finish with salt and pepper.

Low Carb Brussels Sprouts Recipe

  • Brussels sprouts
  • bacon (I use turkey because I don’t do pork)
  • Butter
  • Hazel nuts

Clean your Brussels sprouts and half them. Fry up your bacon. You will probably need about 1/2 package of bacon for 2 pounds of Brussels sprouts. Once the bacon is finished set the strips aside and fry your Brussels sprouts in the bacon grease. If you are using turkey bacon you need to add some extra butter. when the Brussels sprouts are tender and almost done throw in your chopped hazel nuts to get a bit toasted. Mix in  your bacon that you have chopped. Even people who don’t like Brussels sprouts can’t resist this tempting dish.

Broccoli with Hollandaise Sauce – Low Carb Holiday Recipe

Nothing says fancy holiday meal in our household like holiday sauce (Hollandaise)!  Cooking the broccoli can be as simple as steaming it a bit in water or as fancy as sauteing it in butter and olive oil. I love to add garlic to sauteed broccoli, but not when I’m adding holiday sauce. Garlic and lemon are kind of weird together in my opinion. Well unless you are adding it to chicken, then it is okay.

How to make Hollandaise Sauce:

What you need

  • 4 egg yolks
  • a Teaspoon of water
  • 1 Teaspoon of lemon juice (from a real lemon is best)
  • a Stick of butter (melted)
  • pinch of salt & pint of cayenne pepper (or a drop of hot sauce)

How to put it together

Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use. If the sauce gets too thick, whisk in a few drops of warm water before serving.

Low Carb Pumpkin Pie Recipe

The crust

  • 2 cups (225 grams) blanched almond flour (almond meal–which often has bits of the dark brown skins in it–works but makes a heartier, more rustic crust)
  • 1 tablespoons swerve
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 2 tablespoons coconut oil (chilled briefly to firm up, if necessary; may substitute cold butter)
  • 1 egg
  • 1/4 teaspoon vanilla

Mix the ingredients together then push into pie dish. Bake at 375 for 10 to 15 minutes. Let cool

The custard

  • 15 oz can Pumpkin puree or 2 cups fresh pumpkin pulp
  • 1/2 cup heavy cream
  • 2 large eggs
  • 2/3 cup Swerve
  • 2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Mix everything together in a bowl then place in the baked pie crust. Bake at 325 for 40 to 50 minutes. The pie should be a bit wiggly in the center. Serve with homemade whipped cream.

Whip whipping cream in a glass bowl with squeaky clean beaters that are also cold. Add a bit of powdered swerve for sweetener. A little goes a long way with Swerve. You can add a couple drops of vanilla to make is extra special.
